Short answer

Structured outputs make a model reply in an exact data format, such as JSON that matches a schema you define. Other software can then read the answer reliably, so AI can fill spreadsheets, CRM fields or forms without manual cleanup. OpenAI, Anthropic and Google document schema-based options. Some vendors offer only looser JSON modes.

What it is

Structured output is model output constrained to a machine-readable format. OpenAI distinguishes two levels. Structured Outputs ensure responses follow your JSON Schema. JSON mode only ensures valid JSON.

How it works

  1. Write a schema listing the fields, types and allowed values you need.
  2. Send it with your prompt using the vendor’s option (checked 2026-10-17):
    • OpenAI: Structured Outputs.
    • Anthropic: JSON outputs, plus strict tool use, which guarantees schema validation on tool inputs.
    • Google Gemini: responses that follow a JSON Schema.
    • DeepSeek: a JSON mode. Its docs say to include the word “json” and an example in the prompt.
  3. Parse the response into your system, but still validate the values.

Benefits

  • Reliable extraction from emails, invoices, transcripts and forms.
  • Fewer brittle text-parsing scripts.
  • Makes AI steps safe to chain in automations (see tool use).

Limits and risks

  • A valid format can still hold wrong values.
  • Very complex schemas may be rejected. Each vendor documents which schema features it supports.
  • Support differs by model and vendor.
